NAVSUP FLC Norfolk Holds Food Safety Course

The Naval Supply Systems Command Fleet Logistics Center (NAVSUP FLC) Norfolk Navy Food Management Team (NFMT) held a SERV SAFE course for fleet culinary specialists (CS) and hospital corpsmen (HM) Oct. 23 through 26 in Norfolk.

According to U.S. Army Sergeant First Class Deshana Jones, a NFMT instructor, the class is designed to ensure food safety and food defense standards are in compliance with current certification standards of the National Restaurant Association and the Tri-Service Food Code.

"This class helps CSs better serve their shipmates by giving them the safekeeping tools to reduce potential of all forms of contamination," she said. "It helps them understand receiving procedures and protocol to follow, if food is not received per contractual instruction; it helps them understand the importance of cooking, holding and serving food to the appropriate temperatures; it teaches correct cleaning practices to assure equipment is cleaned effectively; and it highlights the necessity of proper health screening before a food handler works in food preparation areas."

She added that the course is four days long. The class material is taught for the first two days, the third day is to review the material and take a pre-exam, and the last day students are given the actual exam that certifies them for the food protection manager certification.

"There is classroom setting and then students are taken into the galley to assure training is relatable," she added. "Also, during the review portion, games are introduced to interact with students and to test their level of knowledge."
